PROCESS STRUCTURE


Process structure illustrates the types of resources needed by a business, how those resources are dispersed, and the features they have. It also involves the layout which demonstrates the physical look of the businesses. They must be laid out for optimal performance and movement for workers and customers. Trattoria and Dominick's is considered a hybrid type office because customers are choosing their orders, there is a standard menu provided which is designed for them to select from. It is a set menu that Michele Pannia creates, because this isn't the average Italian restaurant. Trattoria translates to family style. This means you pick what type of salads, appetizers, meats/fish, pasta, and dessert. These items are all pre-picked and makes it simpler for all involved. The orders may need to be altered. For example, changing out vegetables, different types of pastas or sauces, or cooking to exact temperatures for the specific cook of meat and finish. The underlining service revolves around providing high end cuisine while also providing a comfortable cozy, and enjoyable atmosphere. Additionally, while catering to the guest occurs in the front, the actual assembling of the dishes is completed in the kitchen behind closed doors.


CAPITAL INTENSITY 

For the capital intensity, human skills are considered to be 
a very important role. While the equipment is necessary for preparing the meals. The restaurant staff in the front is there to insure that there is pleasant atmosphere for guest and that they have everything ready as orders get completed in the back. Also, the chef and other kitchen staff are actually making the meals, guaranteeing that they will all be delivered the way the head 
chef Michele Pannia intended. Things must be top notch
 quality so that the customer is satisfied.


Customer Service & Experiance

Upon doing our site visit, we became aware of the processes required  for a pizza 
restaurant. Trattoria Mediterranea and Domick's Pizza 
Shoppes was easily identifiable 
by the street address, exterior look of  the restaurant as well
 as being a stand alone location. For the dining experience, 
we observed that it was important for customers to be greeted upon entry and also that good service and customer satisfaction 
is vital to bringing in new and have repeat customers. 
To add to that food preparation, the cleanliness of the establishment is important so that the restaurant looks both presentable and like a place a customer
would want to eat at. We also noticed that it was important to 
ask the customers anything they
 needed so that they could leave the restaurant content.
 If the customers had any suggestions, the workers take note 
of it and see if anything what they can improve. 
This helps them to achieve maximum efficiency.POS 
systems are very important for the restaurant to keep track of 
the various processes. Lastly, being aware of the headcount 
of people for various events and seating arrangements are 
key in order to assure a smooth flow throughout the day. It provides efficient work areas, 
making sure the distance from table to table is not too far to 
the point the waiters are walking unnecessary steps.
